For deathmetal i agree. Although i find it difficult to speak in absolutes on this matter...

For mainstream popmusic listen to Madonna's Ray of light. I'm not particularly fond of her but that album sounds amazing because of her producer.

I think Testament's The Gathering, Kreator's Enemy of God and Wages of sin from Archenemy sound good production wise.

Also every time i hear Reign in blood i am amazed as how up to date it sounds. Probably because of the dryness of the recording.

I do think that because of the "loudness war" newer productions lack dynamic subtleties.

oddly enough, i'm not a big fan of his production work, usually when you turn the shit up loud everything gets muffled, he doesnt make the music sound crisp and clear enough. but i still love his work and most of the bands that he has produced

I also love the production on Tormentors Anno Domini. Probably the best black metal production ever, followed by UTSOTBM - Bathory.

i like the production on symbolic; that crystal clear guitar tone could slice through butter...then again i also like dirty guitar tones– bloodbath, dismember, entombed etc.

also the productions of oceanic and panopticon, great heavy crushing guitars + clean atmospheric guitars and a nice organic drum sound.

I don't know if I could pick a particular type of production as my favourite.

If I like an album, it's because I like the full package.
