I think Testament's The Gathering, Kreator's Enemy of God and Wages of sin from Archenemy sound good production wise.
Also every time i hear Reign in blood i am amazed as how up to date it sounds. Probably because of the dryness of the recording.
I do think that because of the "loudness war" newer productions lack dynamic subtleties.

I also love the production on Tormentors Anno Domini. Probably the best black metal production ever, followed by UTSOTBM - Bathory.

i like the production on symbolic; that crystal clear guitar tone could slice through butter...then again i also like dirty guitar tones– bloodbath, dismember, entombed etc.
also the productions of oceanic and panopticon, great heavy crushing guitars + clean atmospheric guitars and a nice organic drum sound.

tbph metallica's s/t is in the top 5 of the best produced albums I've ever heard. staub is a complete fucking beast as far as mixing/engineering goes.
