last night i was fucking rabid for some japanese style grilled pork intestine but we ended up just going to a sort of western farm-to-table place that was infinitely more expensive and inferior

There's quite a few of these popping up in the local area lately. Me and the mates went to one of the newly-opened ones nearby. Aside from the various types of sauce choices, they also have a side condiment consisting of julienned pickled green papaya with ginger and chilis that go well with the meat parts and alcool. It's similar to kimchi. They give that for free with unlimited refill.

I have eaten at the Korean meat bath places like this before, though they were sit down indoor establishments - the food was excellent. one of those where you order your proteins and then cook them at the table and it's served with all kinds of sides like kimchi, various pickled veggies, and various sauces.
There is a Thai temple here called Wat Promwachirayan that does outdoor food service every Sunday, I hit it up almost every week and get some good and fucking spicy Thai street foods. In the winter they have an indoor service that's an all you can eat buffet. It's not cheap but is less expensive then going to a sit down restaurant.
as far as food poisoning goes - never gotten it from outdoor stalls or food trucks but have gotten it from fucking chain restaurants
worst I ever had where I actually had serious concerns for my health was from Hooters - went with friends and we all had chicken wings and beers except for one hard-on bearer who ordered a hot dog (who we then made fun of the entire night). hot dog hard-on bearer was the only person who wasn't deathly ill the next day.

The only food poisoning instances here are usually from consuming seafood caught in red tide waters or when fisherfolk who are not in the know get themselves some pufferfish for dinner.
I don't think I've ever heard of anyone getting food poisoning from chicken/pork/beef offal.
