yah, the common cafe that serves burgers is not the common hippy cafe. thats why you haven't seen any. and sweet potato fries are delicious are from what i've seen, less common than hummus.
modern casual american cuisine is fucking delicious. i don't know the official term for it or if there is one, although i'm sure there is. common ingredients are
hummus
falafel
wraps
lots of fresh greens and sprouts
focus on local and organic and vegetarian and healthy
lots of "twists" on classic dishes from many cultures
like vegetarian spinach lasagna served over steamed kale
