What exactly is Stephen Seagal doing in there though, that's what I don't get.

If you have not followed MMA scene closely then you don't get the joke here.
But in a nutshell. Seagal is Aikido black belt master, have been since his early twenties and that is what lifted his movie career --> Martial Arts. But now lately he has been training few Blackhouse Gym fighters, like Anderson Silva and Lyoto Machida. Now both of mentioned fighters won their last matches with front high kick to opponents face which has not been seen in UFC before. And Seagul has taken responsilbiity of teaching those kicks to both of the fighters. And in that vid Seagul is the narrator voice
