Besides the obvious ones like Ne Obliviscaris, Korpiklaani, and early My Dying Bride anyhow. I always loved the atmospheric and often haunting melodies that a live violin (outside of an orchestra) can bring to a metal band's sound:

Im okay with it but it needs to be done tastefully. If its a minute long violin solo I'd probably fast forward or skip it. Ibthink it would fit well with some of the more somber music as opposed to death or thrash.
