That dish in particular I got no clue. I'm not a big time ramen connoisseur. I do know that there's plenty of spots around here that have birria on the menu in a thousand different ways.

i've never seen it out in the wild and it wouldn't be my first choice for an attempt at ramen, but it doesn't really surprise me either. random fusion has been a thing for a long time now. as long as it's got alkaline wheat noodles you can call it ramen, obviously this isn't a traditional ramen, and whoever made this needs to learn how to time soft-boiled eggs. but i'd bet it's probably quite edible.

i made some beef ramen back in late summer/early fall using some leftover stock i'd prepared back in the winter for beef bourguignon. it's actually quite hard to go wrong with the basic combo of soup base + tare + noodles + whatever else!

A place near me sells it, Id rather have tonkatsu or shoyu tamen. Shoyu isnt hard to make at home either.

I like birria tacos just too fatty/salty in ramen.

this thread and also a separate conversation inspired me to thaw the rest of my stock and make bootleg ramen tonight. it's been in there like ten months now so it's probably long since gone off but we'll see shortly i suppose

I have not had this particular ramen but I enjoy a good bowl. the place up the road does a good ramen - they have salty duck ramen that is to die for.

My loval grocer had 4 pounds of ground duck for $13 i need to think of how to use it

Im going on an autoimmune diet gor migraines so gotta use all the stuff in my freezer and pantry since itll take about a year to do it properly with all potential triggers.

I've only had ground duck once. Lettuce wraps with all kinds of different veggie toppings. Shit was fantastic, I'd do it again in a heartbeat if could find ground duck at those prices.

Def not the normal price i just look for deals on protein and store it in the freezer. Only thing i dont buy because Im intimidated to prepare it at home is tripe.

btw i put chilli bamboo shoots in basically all the noodle soups i make at home, once you're addicted to those you can't stop

no, combination of length of time required and inability to have unfettered access to the kitchen during that gay man's telescope

there are hour long blocks of time where i simply can't enter the common area because he is in them and smells so fucking bad i can't be in the same space without getting physically ill

i actually have to light off a stick of obnoxiously heavy-duty incense in the kitchen every few days to keep things relatively tolerable. it's just masking obviously, but it sure as hell beats the alternative

it's just very far afield from traditional approaches to ramen. they ordinarily have different flavor profiles, and beef also isn't a common ramen base. it's just a fusion approach which some people dismiss, because it often becomes a game of combining dishes from random countries X & Y without much thought to whether they mesh together well. like sleep token, but for food. i don't really have a strong opinion on it, i'd try it but i'd have low expectations probably.

as noyka said, if you just mash regular birria and ramen components together, it'll probably be excessively salty because you're flavoring the soup with tare, which is a super-concentrated salt-umami bomb

Instant pots are a good short cut for broths and some soups too its not gonna be as good as proper but Ive used it for short cut chicken broths and made things like leek and potato soup in it.

My mom got one for me last christmas not my favorite tool (that would be my dutch oven or cast iron skillet) but Ive been seeing what it can be used for other than beans which it makes really good beans.

i use a slow cooker for my curries, you can't beat putting a curry on at 11 p.m. slow cooking for 8 hours, wake up to a great smelling kitchen, fucking tender as a jellywobbly meat curry for lunch :idea:

yeah i've thought about doing the pressure cooker shortcut. i'm not temperamentally opposed to it, i just have the smallest instant pot that was available so it doesnt have the capacity for soup-making that i need :eyes:
